So in that respect, this post is dedicated to my cat buddy, Dexter. He manages to be both my best friend and worst enemy, is super patient around the Fruitaholic, and is always ready for a good snuggle. He sleeps underneath the covers in the Husby’s arms every night. I truly don’t know what I’d do without him.
I adopted Dex from the Anti Cruelty Society in 2002 when I first moved to the city. He was a bargain… The best $55 I’ve ever spent! And while he and the Husby were initially at odds with each other, they’re best friends now. He’s our first baby, albeit of the furry variety, and we wouldn’t have it any other way.

Beer Cheese Soup – slightly adapted from Food Network
Beer Cheese Soup
- 6 Tbsp. Unsalted Butter
- 1 Onion, chopped
- 3/4 Cup Flour
- 1/8 tsp. Nutmeg
- 4 Cups Chicken Broth
- 12-16 oz Beer (I used Newcastle Brown)
- 1 1/2 Cups Milk
- 2 Packages (4 Cups) Shredded Triple Cheddar Cheese (I used Kraft)
Melt the butter in a large saucepan over medium-low heat. Add the onions and cook until softened, about 15 minutes.
Slowly add the flour and nutmeg to the onions, and cook for 5 minutes, stirring constantly, until the mixture is lightly browned.
Add the broth and beer and mix until well blended. Bring to a boil, then reduce heat to simmer and cover, stirring occasionally for 10 minutes. Add the milk and whisk in cheese until completely melted.
